Banana's Amazing Omelet
5 eggs, separated
1/2 tsp. garlic powder
1/2 onion, thinly sliced
1/4 green onion, thinly sliced
1/4 red onion, thinly sliced
1 roma tomato, diced
cooking oil
Beat the egg whites with an electric mixter for 3-4 minutes or until they become slightly fluffy. Add the yolks to the egg whites and blend for 1 minute. Add garlic powder and blend. In a small fry pan, saute the vegetables until tender. Coat a second large fry-pan with oil and heat until medium heat. Add 1/3 of the egg mixture and cook until the eggs are not stuck to the bottom of the pan (about 3 minutes). Turn with a spatula and cook until eggs do not stick (about 1 minute). Repeat twice with the remaining egg. Top with cooked vegetables and diced tomato. Serve warm. Serves 3.
Banana's Notes:
Add whatever vegetables you want. Sometimes, I add mushrooms or fresh garlic or spinach. You can also top the omelet with salsa or sprinkle grated cheese when still warm.
Don't skip the step of beating the egg whites. It is the most important. It makes the omelet thicker and it helps the eggs to not stick to the pan. Also, be sure the pan is heated all the way before you add the egg otherwise it will stick.

Someone once asked me if Banana's Amazing Omelet is a fruit omelet. No, this recipe does not have any bananas in it. That's just my web name. Thanks for the strange idea. I would try it, but Noj says it's too weird.
