Day-after Turkey Quiche

1 cup cooked turkey, diced
1 medium onion, diced
1 T (or so) cooking oil
chopped fresh parsley
1 cup shredded cheddar cheese
9 eggs
1 can evaporated milk
1 tsp. salt

Heat cooking oil to medium heat in a medium sized fry pan. Add turkey and onions. Cook until onions are translucent (or more, if desired).

Layer turkey, onions, parsley and cheese in the bottom of a large baking dish.

Beat eggs. Add evaporated milk and salt. Beat until blended. Gently add to the baking dish.

Cook in 415 degree oven for 15-20 minutes. Reduce heat to 300 degrees and cook for 10-15 minutes more or until a knife inserted in the middle comes out clean and edges are browned.

Banana's Notes
Serve with cranberry sauce.

If you want to get creative, you can also add stuffing, green beans or other left-over Thanksgiving foods before pouring the egg mixture into the pan.
