Ginger-Apricot Chicken

3 chicken breasts, cubed
1 medium onion, sliced
2 garlic cloves, diced
2 cans (14 oz each) apricots
1/2 to 1 tsp ginger powder (or use fresh ginger)
salt, to taste
cooking oil

Drain and rinse apricots. Combine with ginger and salt in the blender. Puree until sauce is smooth, adding a small amount of water if needed to make the sauce the desired consistency.

Coat large fry pan with cooking oil. Heat to medium-high heat. Add onions. Cook, stirring frequently until tender and starting to brown. Add chicken and garlic. Stir fry until chicken is cooked on the outside.

Pour apricot mixture over the chicken. Cover. Reduce heat to low and simmer for about 5 minutes or until chicken is fully cooked. Serve over rice.

Banana's Notes
I think I also added some honey to the sauce, once. Also, I once substituted the apricots with a pear and peach mixture. It was good, but not as good.

A previous post has an apricot chicken recipe for the crock pot. Very similar, but different preparations.
