Korean-Style Fried Rice
3 eggs, beaten
cooking oil
2 cups rice
1 medium yellow onion
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 zucchini, cubed
3/4 cucumber peeled and diced
1/2 cup frozen green peascooking oil
2 cups rice

3 green onion, chopped with tops
2 medium tomatoes, diced
2 cups cooked brown rice
garlic powder
salt
soy sauce
toasted sesame oil
Heat cooking oil in large fry pan. Add eggs and cook, stirring until completely cooked. Remove eggs from pan, add a little more oil and saute yellow onion and peppers about 10 minutes or until tender. Stir in zucchini, cucumber, peas and rice and cook until thoroughly heated. Remove from heat and add cooked eggs, green onions, tomatoes and seasonings (to taste). Serve with ketchup.
Banana's Notes
The ketchup is essential for a true Korean taste. You can also substitute carrots or other veggies if these are not to your taste.

Tino doesn't like peppers or onions. Besides carrots, what other vegetables would you substitute in their places?
