Salad on My Stir-Fry
1/2 lb stir fry beef
1/2 red onion, sliced
2 small yellow summer squash, sliced rectangularly
3 cloves garlic, diced
1 large hand-full spinach leaves
1 medium tomato, sliced
cooking oil
cooked brown rice
salt
garlic powder
Cook stir fry beef in a medium-high skillet until browned. Drain if necessary. Add oil, onion and garlic. Stir fry until onion is tender. Season mixture, to taste. Add squash and stir fry until squash is tender, about 5 minutes. Turn off heat and add spinach and tomatoes to the top of the stir fry. Let sit for 5 minutes to warm the 'salad'. Serve over rice.
Banana's Notes
If you'd like to stir in the spinach and tomatoes, they will cook a little more. The way I serve it, the spinach is just barely starting to wilt. You can also try to chop the spinach and stir it into the mixture. I tried a new oil for this dish. It has a great flavor, and can cook at really high heat. Try grapeseed oil. It is high in polyunsaturates.
