Applesauce Bread

4 cups whole wheat flour
2 tablespoons corn starch
4 teaspoons baking soda
1 teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon pumpkin pie seasoning
½ teaspoon salt
1 cup grapeseed or other vegetable oil
½ cup honey
3 cups applesauce
1 cup raisins

Mix dry ingredients in a large bowl.

In a separate bowl, combine oil, honey, applesauce and raisins. Add to dry ingredients. Mix well.

Spoon into 2 large (5x9-inch), greased loaf pans. Bake at 350 degrees for 1 hour or until a wooden pick inserted in the center comes out clean. For muffins, spoon into lecithin-greased muffin cups and bake 20 minutes.

Banana's Notes
The lecithin is the best way to grease pans for baking. The breads just slide out of the pans when I use it. You can find it in a health food store or a specialty food market. I bought a jar six years ago, and it isn't even half gone. A little bit goes a long way.
