Lemon Crazy Muffins

2 1/4 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup yogurt (vanilla or lemon)
1/3 cup honey
¼ cup sunflower, coconut or other cooking oil
2 egg whites
2 tablespoons lemon juice
2 tablespoons grated lemon peel
1 teaspoon vanilla extract
¾ cup craisins

In a large mixing bowl, combine the dry ingredients. In a separate bowl, mix together yogurt, honey, oil, egg whites, lemon juice, lemon peel and vanilla. Stir in craisins. Add to the dry ingredients and mix just until moistened.

Spoon into 12 paper-lined or lecithin-greased muffin cups. Bake at 400 degrees for 15 to 20 minutes or until a wooden pick inserted in the center comes out clean. Cool on a wire rack.

Banana's Notes
These are named by Ewan. He can't say craisin, so we just called them crazy muffins. I used coconut oil when I made these, and the flavor seems to blend well with the lemon and vanilla.
