Apricot-Ginger Chicken

1 1/2 lbs. chicken (if bone-on, remove skins)
1 can apricots, drained
2 T. peach jam or other preserves
2 tsp. ginger powder (or use fresh ginger)

Place apricots, jam and ginger in a blender. Process until smooth.

Put chicken in the bottom of a crock-pot. Cover with apricot sauce. Heat on High for 3-4 hours or on Low for 6-8. Serve with rice.

Banana's Notes
In place of the peach jam, you might want to try orange marmelade. We used the extra apricot sauce for a topping on our rice. If you are serving a large group, add more chicken. There is plenty of sauce to make a bigger meal.
